Red cabbage salad
Serves 4

SALAD INGREDIENTS:
½ red cabbage, thinly sliced
20 g sliced almonds
4 shallot stalks, finely chopped
½ bunch fresh basil, chopped

DRESSING INGREDIENTS:
2 tablespoons olive oil
2 tablespoons soy sauce (tamari)
2 teaspoons Dijon mustard

INSTRUCTIONS:
Roast almonds in a dry pan until golden, then let cool. Combine the almonds, cabbage, shallots and basil in a bowl. Combine dressing ingredients, pour over salad and toss.
